Cinnamon Roll Cupcakes are a cinnamon and brown sugar cupcake with rich cream cheese frosting, topped with a cinnamon drizzle.
Perfect for a Mother's Day breakfast, brunch, party, or anything in between!
Preheat your oven to 350 degrees. Combine the cupcakes' dry ingredients -- flour, baking powder, salt, and cinnamon -- and set aside.
Cream butter and sugars until fluffy.
Beat eggs into the butter-sugar mixture, one at a time.
Add vanilla extract and mix well.
Mix in the dry ingredients and milk, little-by-little as needed, until well mixed.
Add batter to greased cupcake pan.
If you like, you can make cake crumbs as a topping, by adding any remaining batter to a small baking pan, and removing when cooked (2-3 minutes). When cooled, break into crumbs, and set aside.
Bake for 16-18 minutes until golden, or an inserted toothpick comes out clean. Set aside to cool.
Cream Cheese Frosting Directions:
Cream butter and cream cheese togerther, until fluffy.
Add powdered sugar, little-by-little, beating well between each addition.
Mix in vanilla extract. Set aside.
Cinnamon Drizzle Directions:
Whisk together butter, powdered sugar, and cinnamon.
Add milk, and whisk until smooth.
Once the cupcakes are cooled, spread with Cream Cheese Frosting.
Top the frosted cupcakes by sprinkling with the extra cake crumbs, and adding the Cinnamon Drizzle.
