First make a simple syrup: Stir 3/4 cup sugar and 1/4 cup water in a small pan over medium-high heat.
Cook until the syrup reaches 240 degrees (115 celsius), then set aside to cool.
If the syrup gets too cold and hardens, reheat it on low to liquify it again.
Using an electric mixer or beaters, egg whites, salt, and vanilla in a large mixing bowl, on high, until frothy.
Gradually add the 1/8 cup sugar, while continuing to whip until small peaks form.
Reducing mixer to medium, slowly pour hot syrup in a steady stream, while mixing.
Once all the syrup has been mixed in, switch to high and whip until stiff peaks form.
Add scoops of your favorite ice cream(s!) to serving bowls, and top with your marshmallow fluff.
