In no time have breakfast prepped and in the oven! This giant, fluffy pancake is made in the blender and baked in the oven for a delicious breakfast in a snap.
Preheat oven to 425°F. In a medium cast iron or non-stick skillet, melt butter over medium-low heat. Set aside.
Combine eggs, milk, flour, light brown sugar, vanilla, and salt in a blender and blend until foamy, about 1 minute.
In a small bowl, combine sugar and cinnamon. Pour batter into the skillet and evenly top with banana slices and cinnamon/sugar mixture. Place skillet into the oven and bake for 20 minutes until golden and puffy.
Slice and serve with maple syrup.
