A great way to use leftover chicken for a lunch treat for mom, dad and the kids.
The amount of chicken for this recipe is approximately equal to half a roasted chicken.
Make it Faster: Use packaged coleslaw dressing in place of the mayonnaise, vinegar, sugar, salt and pepper.
The majority of the prep time is shredding the chicken. It can be thinly sliced or chopped instead. Do whatever is easiest for you.

How kids can help: They mix the chicken with the sauce and the coleslaw mixture to make the coleslaw. They can then build the sandwich.
Substitution(s): Cooked rotisserie chicken breasts or sliced chicken cold cuts can be used instead of cooking chicken. If using cooked chicken, then skip step 1.
Season chicken with salt and pepper. In a small skillet on medium high heat, heat oil until shimmers. Cook chicken about 11 minutes, turning once, or until cooked through.
Combine chicken with barbecue sauce.
In a medium bowl mix coleslaw mixture, mayonnaise, vinegar, sugar, salt and pepper to combine.
Divide chicken and coleslaw between buns.
