Black Bean Salad

What you'll need

  • 3 tbsp. olive oil
  • 4 tsp. lime juice
  • One 14 oz. can black beans, drained
  • 1/2 cup bottled red peppers, diced
  • 3 scallions, thinly sliced
  • Salt and pepper

How to make it

  1. In a large bowl, beat the olive oil and lime juice. Drain and rinse the beans and add to the bowl, along with the peppers and scallions. Toss and correct seasoning. Flavor will improve if you can let the beans stand and absorb the dressing. Makes 4 servings.
