Blueberry Whole Wheat Muffins

Bursting with blueberries is a great way to start the day.

What you'll need

  • 6 tbsp. butter
  • 3/4 cup sugar
  • 2 eggs
  • 1/2 cup milk
  • 1 tsp. vanilla extract
  • 1 cup all-purpose flour, plus 1 tbsp.
  • 1 cup whole wheat flour
  • 1 tbsp. baking powder
  • 1/4 tsp. salt
  • 2-1/2 cups blueberries

How to make it

  1. Preheat the oven to 375 degrees and line a dozen muffin tin with paper liners. In a large mixing bowl, cream the butter and sugar together. Add the eggs, one at a time, and stir in the milk and vanilla extract.

  2. In a separate bowl, sift the flours, baking powder, and salt. Stir it into the butter and sugar mixture. Gently toss the blueberries in the tablespoon of flour, then fold them into the batter. Fill the muffin cups almost to the top and bake for 25 minutes, or until light brown. Makes 12 muffins.
