What you'll need

  • Crunchy "Crumb" Topping Ingredients:
  • 1 Head of Cauliflower
  • 1/2 Cup Grated Parmesan Cheese
  • 1 Cup Seasoned Breadcrumbs
  • 1 Pinch Kosher Salt
  • Heavy Drizzle of Olive Oil (more if needed)
  • Cauliflower Puree Ingredients:
  • 1 Head Cauliflower
  • 1/2 Cup Grated Parmesan Cheese
  • 3/4 Cup Shredded Mozzarella Cheese
  • 1 Cup Milk
  • Kosher Salt to Taste

How to make it

  1. Crunchy "Crumb" Topping: Finely chop cauliflower so it resembles fine "grains." Place all ingredients in bowl and mix with fingers to create crumbs. If mixture is dry, add olive oil.

  2. Cauliflower Puree: Chop cauliflower into florets and place in boiling water for 15 minutes (until fork tender).

  3. Puree all ingredients in food processor until smooth.

  4. Spread puree into smooth single layer in a shallow roasting dish. Spread "crumbs" evenly over top. Bake in a 400 degree oven for 20 minutes, or until "crumbs" are golden brown. ENJOY!
