Crunchy "Crumb" Topping: Finely chop cauliflower so it resembles fine "grains." Place all ingredients in bowl and mix with fingers to create crumbs. If mixture is dry, add olive oil.
Cauliflower Puree: Chop cauliflower into florets and place in boiling water for 15 minutes (until fork tender).
Puree all ingredients in food processor until smooth.
Spread puree into smooth single layer in a shallow roasting dish. Spread "crumbs" evenly over top. Bake in a 400 degree oven for 20 minutes, or until "crumbs" are golden brown. ENJOY!
