Chicken Enchiladas

Your whole family will love this recipe! Using Uncle Ben's Rice, you can create a delicious and fun chicken enchiladas.

What you'll need

  • 2 chicken breasts
  • 8 whole wheat tortillas
  • 2 cups red enchilada sauce
  • 1 cup Monterey Jack cheese
  • 1/4 cup cilantro
  • 1 box Uncle Ben's® whole grain white taco-style rice
  • 1 cup 1 cup chopped yellow onion
  • 1 cup corn kernels
  • 1 cup black beans

How to make it

  1. Prepare the Uncle Ben's® Whole Grain White Rice Taco Style as instructed on the box. Preheat oven to 350 F degrees.

  2. While rice is cooking, sauté onion corn and black beans. Add shredded chicken. Set aside. When rice is finished, mix into onion corn bean and chicken mixture.

  3. Heat tortillas in microwave for about 15 seconds. One at a time, lay 1 cup of chicken mixture in the middle of a tortilla. Add 1 to 2 tablespoons of enchilada sauce. Roll tortilla closed and then lay seam side down in a deep baking dish. Continue with all tortillas. Add about 1 to 2 cups more enchilada sauce over the top of the tortillas. Cover with Monterey Jack cheese and bake for 20 minutes or until internal temperature is 140 F degrees. Serve enchiladas hot topped with fresh chopped cilantro.
