Chocolate Chip Coconut Blonde Brownies

These sturdy bars are perfect for lunchboxes and can even be individually wrapped and frozen for a freshly baked treat any time!!

What you'll need

  • 1 1/4 cup all purpose flour
  • 1 1/2 cups brown sugar, lightly packed
  • 1 1/2 teaspoons baking powder
  • 2 large eggs, whisked together
  • 10 tablespoons salted butter, melted and slightly cooled
  • 2 teaspoons vanilla extract
  • 1/2 cup sweetened shredded coconut
  • 1/2 cup semisweet chocolate chips
Helpful Tip:

These bars are easily customizable -- feel free to sub in your favorite chips, nuts or candies.

How to make it

  1. Preheat oven to 350.  Line an 8x8 or 7x10 pan with foil and lightly spray with vegetable oil spray.  Set aside.

  2. In a large bowl, whisk together flour, brown sugar, and baking powder.  Add beaten eggs, vanilla and melted butter and stir with a sturdy wooden spoon until combined.  Fold in coconut and chocolate chips and spread batter evenly in prepared pan.

  3. Bake bars for about 30 minutes or until golden brown all over and a toothpick inserted in the center comes out clean.  Cool on a rack until room temperature.  For easier cutting, cover and refrigerate until serving.  Remove entire foil from pan, peel away from bars, and cut into desired serving sizes.
