How to Make Chocolate Cupcakes

Make your party guests swoon with delight or surprise your family with this favorite dessert treat.  I like to customize this basic recipe by adding chopped fresh cherries to the mix for a dark forest touch or some freshly brewed espresso for a mocha kick.  Sometimes, I'm feeling a little adventurous and add a some chili powder for a sweet and spicy kick.

What you'll need

  • 1 1/2 cups flour
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/3 cup cocoa powder
  • 1/2 cup butter softened
  • 2 eggs
  • 1 cup milk
  • 1 teaspoon vinegar
  • Ingredients For Chocolate Frosting
  • ½ cup butter
  • 2/3 cup cocoa power
  • 4 ½ cups confectioner’s sugar
  • 1/3 cup half and half
  • 1 teaspoon vanilla extract
  • pinch salt
Notes:

Makes 1 dozen cupcakes

How to make it

  1. Preheat oven to 325 °F. Line cupcake pans with paper liners; set aside.

  2. Combine in a bowl flour, sugar, baking soda, cocoa powder and salt. Mix on low speed until combined for about 3 minutes.

  3. Add in butter, vinegar and eggs 1 at a time until combined. Slowly add milk to batter until completely mixed scraping down the bowl as you mix.

  4. Scoop batter into baking cups filling about 2/3 full. Bake until a toothpick  inserted in the center comes out clean, 17 to 20 minutes.

  5. Chocolate Frosting Preparation:

    In a large saucepan over low to medium heat, melt butter and add cocoa.  Stir until smooth. 

  6. Alternately beat in powdered sugar and milk with hand mixer until smooth and creamy.  Fold in vanilla and salt.

  7. Frost cupcakes, top with a chocolate Kiss candy and sprinkles and enjoy!
