Here's a variation on chicken salad that has a bit of a kick, and a couple surprises, too -- grapes for a sweet accent and cashews for crunch.
In a small bowl, blend the mayonnaise, sour cream, lemon juice, curry powder and mustard and then set aside.
Combine the chicken, grapes, and cashews in a large bowl. Add the dressing and mix well. Salt and pepper the chicken salad to taste.
To assemble the sandwiches, halve the pita breads and place a couple lettuce leaves inside each half. Spoon in the chicken salad and serve. Makes 4 to 6 sandwiches.
