Four Great Frostings

Top off your next cake with one of these great frostings, including vanilla, chocolate, lemon, and a special frosting just for decorating.

What you'll need

  • 3 1/2 cups of confectioners' sugar
  • 1/2 cup of butter (at room temperature)
  • Milk (amount depends on frosting)
  • Vanilla extract (amount depends on frosting)
  • 1/3 cup of cocoa powder (chocolate frosting only)
  • 5 tablespoons of lemon juice (lemon frosting only)
  • 1 teaspoon of grated lemon zest (lemon frosting only)
  • Food Coloring (for decorators' frosting)

How to make it

  1. Vanilla Frosting: Cream 3-1/2 cups of confectioners' sugar with 1/2 cup of butter (at room temperature). Add up to 5 tablespoons of milk, 1 tablespoon at a time, beating well after each addition. Beat in 2 teaspoons of vanilla extract.

  2. Decorators' Frosting: Follow the directions for vanilla frosting but decrease the milk to 4 tablespoons and the vanilla extract to 1 teaspoon. Stir in food coloring.

  3. Chocolate Frosting: Cream together 3-1/2 cups of confectioners' sugar, 1/3 cup of cocoa powder, and 1/2 cup of butter (at room temperature). Beat in 5 tablespoons of milk, 1 tablespoon at a time. Then beat in 1 teaspoon of vanilla extract and 1/4 teaspoon of salt.

  4. Lemon Frosting: Follow the directions for vanilla frosting but substitute fresh lemon juice for the milk and vanilla extract. Stir in 1 teaspoon of grated lemon zest.
