Deli roast chickens are available almost everywhere nowadays. I pass them at the deli counter and then again in heated bins at the check-out at my favorite store. These are good for so many things and a quick alternative for nights when everything seems to be running behind. This is one of the tastiest ideas I have for these birds.
Change things up by using halved grapes, diced apples, sliced peaches or plums, and add your favorite nuts as a garnish.
Yields 6 servings
Toss greens, fruits, onion and bell pepper in a large bowl and divide among 6 plates.
Top with shredded chicken and drizzle with salad dressing.
