Deli roast chickens are available almost everywhere nowadays. I pass them at the deli counter and then again in heated bins at the check-out at my favorite store. These are good for so many things and a quick alternative for nights when everything seems to be running behind. This is one of the tastiest ideas I have for these birds.

What you'll need

  • 1 deli roast chicken, meat only, shredded
  • 6 cups salad greens (a blend works well)
  • 1 mango, peeled and diced
  • 1 kiwifruit, peeled, halved and sliced
  • 1 cup hulled and sliced strawberries
  • 1/2 cup sliced red onion
  • 1/2 cup each red and yellow bell pepper
  • 1 cup raspberry vinaigrette or other fruit blend salad dressing
Helpful Tip:

Change things up by using halved grapes, diced apples, sliced peaches or plums, and add your favorite nuts as a garnish.

Notes:

Yields 6 servings

How to make it

  1. Toss greens, fruits, onion and bell pepper in a large bowl and divide among 6 plates.

  2. Top with shredded chicken and drizzle with salad dressing.
