A sweet stir-fry that will make everybody smile.
Slice the pork into thin strips; set aside. Combine orange juice, honey, soy sauce, cornstarch and ginger in a small bowl; mix well. Heat 1 tablespoon oil in a wok or large skillet over medium heat. Add carrots and celery; stir-fry about 3 minutes. Remove vegetables and set aside.
Pour remaining tablespoon oil into the skillet. Add the pork and stir fry about 3 minutes. Return the vegetables to the skillet. Add the sauce mixture and the nuts. Cook and stir over medium heat until the sauce comes to a boil and thickens. Serve over rice. Makes 4 to 6 servings.
