Honey Nut Stir-Fry

A sweet stir-fry that will make everybody smile.

What you'll need

  • 1 lb. pork loin
  • 3/4 cup orange juice
  • 1/3 cup honey
  • 3 tbsp. soy sauce
  • 1 tbsp. cornstarch
  • 1/4 tsp. ground ginger
  • 2 tbsp. peanut oil
  • 2 carrots, sliced diagonally
  • 2 stalks celery, sliced diagonally
  • 1/2 cup cashews or peanuts

How to make it

  1. Slice the pork into thin strips; set aside. Combine orange juice, honey, soy sauce, cornstarch and ginger in a small bowl; mix well. Heat 1 tablespoon oil in a wok or large skillet over medium heat. Add carrots and celery; stir-fry about 3 minutes. Remove vegetables and set aside.

  2. Pour remaining tablespoon oil into the skillet. Add the pork and stir fry about 3 minutes. Return the vegetables to the skillet. Add the sauce mixture and the nuts. Cook and stir over medium heat until the sauce comes to a boil and thickens. Serve over rice. Makes 4 to 6 servings.
