The smell of warm sweetened milk spiced with cinnamon sticks will permeate your kitchen as you prepare this recipe. A common treat in Mexico, this delight can be served hot or cold. This version, my grandmother's version, incorporates crisp and tart apples to balance the sweetness of the raisins and condensed milk. Perfect for a spring treat and a family gathering.
In a medium saucepan over medium heat, place water, rice and cinnamon stick. Bring to a boil and cook for 15 minutes or until the rice is tender.
Strain liquid and discard cinnamon stick. Place the saucepan with rice back on medium heat and stir in milks. Let mixture come to a boil, reduce heat to low and continue to stir gently until mixture thickens.
Add apples and raisins and continute to stir. Serve in small bowl or parfait cups and dust with ground cinnamon.
