Instead of rolling out your dough on a floured surface, roll it out between waxed paper. The cookies will stay moist because extra flour is not incorporated during the rolling process.
Roll out the dough to 1/4-inch thickness between two pieces of waxed paper. Use the cookie cutter to cut out the trees. Bake as directed.
Once cooled, attach the candy with icing to half the trees. Cut a 1/2-inch-thick slice off the ice-cream block and cut out ice-cream trees with the cookie cutter.
