This Great Cake Contest entry was submitted by Knicki64 from Morgantown, Pennsylvania: My son wanted James the train for his 5th Birthday. I had a Thomas Cake pan that I modified to make into James.

What you'll need

  • Two of your favorite cake mixes, preferably by the same company so they bake the same time at the same temperature and use the same ingredients. I used a chocolate cake mix and a vanilla cake mix.
  • The icing is homemade buttercream icing.
  • 2 cups vegetable shortening
  • 2 lbs of confec. sugar
  • 2 tsp vanilla
  • 4 tbsp water
  • 2 tbsp meringue powder. Cream together and thin if needed. I used Wilton colors to color the icing.

How to make it

  1. Make both cakes according to directions. Pour half into a cake pan or a train cake pan until pan is 1/2 full. Whatever is left over make into cupcakes.

  2. Cool cake, I usually cool overnight. Mix colors of icing to proper shade. I started with the black parts, then the yellow, then the red, then the grey.

  3. Use cake tips to decorate.
