Instead of tomatoes use mangos; this is a delicious twist to Mexican staple.

What you'll need

  • 1 ripe mango
  • 2 tablespoons of minced cilantro leaves
  • 1 teaspoon of olive oil
  • juice from 1 lemon
  • 1/4 cup each of diced red and green bell pepper

How to make it

  1. Peel and dice 1 ripe mango.

  2. In a mixing bowl, combine the mango, 2 tablespoons of minced cilantro leaves, 1 teaspoon of olive oil, the juice from 1 lemon, and 1/4 cup each of diced red and green bell pepper. Makes 1 cup.
