Mediterranean Penne Chicken Pasta

This easy skillet meal will quickly become a family favorite. I love to take it to friends when they need a meal because it tastes good hot or cold and is always well liked!  Even kids love it! 

What you'll need

  • Basil Leaves
  • Chicken Flavor Bouillon
  • Penne or Bowtie Pasta (1 Box)
  • Olive Oil
  • Fresh Garlic
  • Chicken Breast
  • Sliced black olives
  • Corn Starch
  • Cherry Tomatoes

How to make it

  1. Bring 4 Quarts of water, 1 tsp basil, 1 tsp chicken bouilon to a boil.  Add pasta and cooked as directed on the box or desired doneness.  Drain and Keep Warm.

  2. Meanwhile heat oil in large skillet over medium-high heat; add 2-3 thawed chicken breasts that have been sliced into cubes and 1 clove minced garlic; stir 6-9 minutes or until chicken is no longer pink. 

  3. In a small bowl, combine 1/2 cup water and 2 teaspoons cornstarch and blend together.  Stir into chicken. Cook and stir for 2 to 3 minutes or until mixture is slightly thickened and glazed.  Pour glazed chicken over cooked penne pasta, add tomatoes, 1 can sliced black olives, green onions if desired,toss and coat. Garnish with fresh basil (if desired).  A sprinkle with Feta cheese is extra yummy! If you like more sauce (we do) we double the sauce recipe!
