Fideo is a staple in every Mexican home. Traditionally, the dish consists of small, tomatoey pasta customized by adding vegetables, ground meat or eaten plain. The bowl is so comforting, it is just like a warm hug from mom loved by children because of its savory flavors. The dish is not only delicious, but quick to prepare on a cold day or when a loved one is feeling under the weather. Enjoy!
In a large saucepan heat oil over low-medium heat.
Add onion and garlic and cook until onion is trasluscent. Stirring frequently. Add dried pasta and stir, mixing well until pasta begins to brown.
Add tomato sauce and stir, incorporating ingredients. Continue cooking for 1 minute.
Add water, potatoes, tomatoes, buillon and cumin. Cover, lower heat to low and let simmer for 20 minutes or until pasta and potatoes are tender. Let cool and serve in small bowls.
