These tiny pizzas are the perfect kid-friendly snack. Not only are they incredibly easy to assemble but they are actually quite delicious. Enlist the kids to help spread the sauce and sprinkle the cheese and let them get creative with the toppings…the possibilities are as endless as their imaginations.
Yield: 24
Preheat the oven to 400 degrees. Cut through the center of each pita using a 2 1/2 inch diameter cookie cutter. Gently separate the bread so you have two rounds. (Or you can just cut off the edges with a sharp knife and separate the halves). Place the pitas on a baking sheet so that the edges of the bread are curving upward.
Top 12 of the pitas with one tablespoon of pizza sauce, a sprinkling of mozzarella (about 1 tablespoon) and one slice of pepperoni. Top each of the other 12 with one tablespoon of pesto sauce, a sprinkling of mozzarella, and a slice of tomato.
Bake for 10 minutes or until cheese is melted. Garnish with fresh basil leaves and serve immediately.
