Most kids love to help make cookies, but lose steam halfway through. I love these cookies because they come together in about three minutes, kids can help roll the balls, press the traditional peanut butter cookie fork lines in the top, and then they can eat them without consuming boatloads of sugar. What's not to love?
(I asked my toddler what I should say about these cookies, and she said, "That they are . . . yummy.").
Yields 12-15 small cookies
In a food processor, blend almonds until they are ground into a coarse meal.
Add remaining ingredients and blend until it comes together in a moist crumb. (If it's not sticky enough to hold together when you pinch it, add a bit more peanut butter).
Roll dough into balls a little smaller than golf balls. Press the tops with a fork twice (once going east/west and once north/south) to flatten.
Refrigerate about 30-60 minutes, until firm. Devour!
