A wonderful noodle dish that your family will love.

What you'll need

  • SAUCE
  • 1/2 cup chicken stock
  • 1/3 cup creamy peanut butter
  • 3 tbsp. teriyaki sauce
  • 2 tbsp. brown sugar
  • 1 tbsp. lime juice
  • 1/2 tsp. garlic powder
  • 1/8-1/4 tsp. hot red pepper flakes
  • NOODLES
  • 6 cups cooked spaghetti
  • 3/4 cup chopped scallion
  • 1-1/2 cups grated carrots
  • 1-1/2 cups broccoli florets, thinly sliced
  • 1 cup snow peas
  • 1/2 cup thinly sliced red cabbage
  • Scallion, cut into thin strips, for garnish
  • 4 tbsp. chopped salted peanuts, for garnish

How to make it

  1. Mix chicken stock, peanut butter, teriyaki sauce, brown sugar, lime juice, garlic powder and red pepper in a large bowl. Add cooked noodles and coat with sauce. Remove noodles from bowl, leaving most of the sauce behind, and place the noodles in a covered dish. Put dish in a 250 degree oven to keep warm.

  2. Heat remaining sauce in a large skillet. Add scallions, carrots, broccoli and snow peas and stir fry 1 to 2 minutes. Add cabbage and cook 1 to 2 minutes more, until all vegetables are slightly tender. Add vegetables and sauce to the noodle mixture and toss. Garnish with scallion strips and chopped peanuts. Makes 4 servings.
