A wonderful noodle dish that your family will love.
Mix chicken stock, peanut butter, teriyaki sauce, brown sugar, lime juice, garlic powder and red pepper in a large bowl. Add cooked noodles and coat with sauce. Remove noodles from bowl, leaving most of the sauce behind, and place the noodles in a covered dish. Put dish in a 250 degree oven to keep warm.
Heat remaining sauce in a large skillet. Add scallions, carrots, broccoli and snow peas and stir fry 1 to 2 minutes. Add cabbage and cook 1 to 2 minutes more, until all vegetables are slightly tender. Add vegetables and sauce to the noodle mixture and toss. Garnish with scallion strips and chopped peanuts. Makes 4 servings.
