This dish has a big wow factor. It's easier to make for a crowd than regular pancakes and much more fun! Everyone will ooh and ahh when you bring this baby to the table.
Fill the center of the pancake with the fresh fruit of your choice. Berries, peaches, and plums are a fave! Scoop some vanilla ice cream into the center and serve as dessert.
Preheat oven to 400 degrees F. Place the eggs, flour, salt, sugar and milk into a blender and blend until smooth, about 1 minute.
Place butter in a 10- or 12-inch cast iron skillet and heat in the oven until butter melts and pan is hot. Using an oven mitt, remove pan from the oven and place on a heat resistant surface. Swirl the pan to ensure that melted butter is evenly distributed. Carefully pour the pancake mixture into the pan.
Bake at 400 degrees F for 15 minutes. Reduce temperature to 325 degrees F. Bake 40-45 minutes or until it reaches a deep golden brown. Remove from oven and immediately slide pancake onto a serving plate.
Top with powdered sugar and a sprinkle of lemon juice. Cut into wedges and serve warm.
