Peanut Butter and Chocolate Granola

We eat pretty simple breakfasts in our house, but the weekend is the time to try new (and usually decadent!) recipes.

You can eat this granola with milk, or, for a lighter touch, try sprinkling a handful on some plain yogurt and mix in some diced bananas.

What you'll need

  • 1/4 cup coconut oil
  • 1/2 cup peanut butter (chunky or creamy is fine)
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup sugar
  • 1 teaspoon vanilla
  • 2 cups old-fashioned oats
  • 3/4 cup chopped nuts (I used cashews)
  • 1/2 cup unsweetened coconut flakes
  • 1 Tablespoon flaxseed meal
Notes:

Yields 3 - 4 cups

How to make it

  1. Preheat the oven to 300 degrees.

  2. In a small saucepan, melt the coconut oil, peanut butter, cocoa powder, and sugar together. Stir frequently until completely smooth and combined. Remove from heat and add vanilla. Stir.

  3. In a mixing bowl, combine oats, flaxseed, nuts, and coconut. Pour chocolate mixture over the top and stir until it is all evenly coated.

  4. Pour onto a rimmed baking sheet and spread evenly. Bake for 40 minutes, stirring every 10 minutes to keep the edges from burning.

  5. Let cool before serving. Store in an airtight container.
