We eat pretty simple breakfasts in our house, but the weekend is the time to try new (and usually decadent!) recipes.
You can eat this granola with milk, or, for a lighter touch, try sprinkling a handful on some plain yogurt and mix in some diced bananas.
Yields 3 - 4 cups
Preheat the oven to 300 degrees.
In a small saucepan, melt the coconut oil, peanut butter, cocoa powder, and sugar together. Stir frequently until completely smooth and combined. Remove from heat and add vanilla. Stir.
In a mixing bowl, combine oats, flaxseed, nuts, and coconut. Pour chocolate mixture over the top and stir until it is all evenly coated.
Pour onto a rimmed baking sheet and spread evenly. Bake for 40 minutes, stirring every 10 minutes to keep the edges from burning.
Let cool before serving. Store in an airtight container.
