Peanut Butter Banana Cupcakes

I love surprising my son once in a while with a peanut butter and banana cupcake tucked in his lunch box.  This fun dessert is so simple to prepare and is a great weekend breakfast treat for the entire family to enjoy.  It also makes a great monkey dessert at jungle inspired birthday parties.

What you'll need

  • 3 tablespoons peanut butter plus more for frosting
  • 2 tablespoons butter, softened
  • 3/4 cup brown sugar
  • 2 eggs
  • 2 ripe bananas, mashed
  • 2 teaspoons vanilla
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 2/3 cups all-purpose flour
  • 2 firm bananas, sliced in rounds for garnish

How to make it

  1. Preheat oven to 350°F.

  2. In a large bowl, mix 3 tablespoons peanut butter, butter and brown sugar until smooth.

  3. With mixer still running, carefully add eggs, one at a time and beat until fluffy.

  4. Add mashed bananas.

  5. Continue mixing and add vanilla, baking powder, baking soda, salt and flour.

  6. Spoon mixture into 20 paper lined muffin tins.

  7. Bake for 20 minutes or until toothpick inserted comes out clean.

  8. Let cool, frost with smooth peanut butter and decorate with a banana slice.
