Refreshing Sweet Mint Iced Tea

I live in Baltimore where we have long, hot summers. In fact, crazy as it sounds, we were the hottest place in the country yesterday. In April! So naturally, my mind has turned to icy cool drinks. There's nothing like a tall ice cold glass of sweet tea to cool you down when the weather heats up. Here's a great caffeine-free version that will refresh kids and parents alike.

What you'll need

  • 4 cups water
  • 5 peppermint tea bags
  • honey, agave nectar or other sweetener
  • ice

How to make it

  1. You'll want to make a really strong tea. I recommend adding an extra teabag per cup of water you use.

    Boil the water over high heat in a saucepan. When it boils, turn off the burner and add tea bags. Let steep for 15 minutes. Remember, we're making a strong tea so we'll need that extra time to extract all the minty goodness out of those tea bags.
     

  2. While the tea is still hot, add sweetner to taste. I find a little goes a long way with this tea. The peppermint is naturally sweet so you may want to skip the sweetner altogether.

    Let the tea cool.

  3. Load up a pitcher with ice and pour the tea over it.

  4. Kick back, relax and enjoy. Mmmm, refreshing.
