Roasted Cherry Tomatoes
What's your Take?
Prep Time 5 minutes Cook Time 20 minutes

While the quality of regular tomatoes suffers in the off season, cherry tomatoes can be a delicious way to get your fix all winter long. Baking them at high heat transforms them into a succulent and flavorful accompaniment to your favorite roast chicken or beef. You could also try stirring them into freshly cooked pasta or spooning them over toasted country bread.

What you'll need

  • 4 pints cherry tomatoes, (heirloom varieties are especially nice)
  • 2 tablespoons extra virgin olive oil
  • 1 large pinch salt and pepper
  • 1 handful basil leaves, sliced thinly

How to make it

  1. Preheat oven to 425 degrees. In a large baking sheet with sides, toss tomatoes with olive oil and salt and pepper.

  2. Roast for about 15-20 minutes, or until tomatoes are soft and beginning to brown in places. Place in a serving bowl and top with basil and another drizzle of oil, or some Parmesan cheese, if desired. Serve hot or at room temperature.
