Like crab cakes? Prepare to love these chicken patties. This recipe is a perfect way to use up leftover roasted chicken but elegant enough to serve to company.

What you'll need

  • For the Sauce:
  • 1/4 cup cilantro
  • 1/2 cup mayonnaise
  • 1 small clove garlic
  • For the patties:
  • 1 large egg
  • 1/2 cup shredded cheddar cheese
  • 1/2 jalapeno, ribs and seeds removed and finely chopped
  • 2 cups leftover or store bought rotisserie chicken, skin removed and shredded
  • 1/4 cup olive oil

How to make it

  1. Place cilantro, mayo and garlic into the bowl of a food processor and process for 1 minute or until mixture is smooth and light green in color. Place into a container with a cover and refrigerate until patties are ready.

  2. In a large bowl combine egg, cheddar, jalapeno and chicken. Mush with your hands until mixture is well combined and holds together when you squeeze it between you fingers. Form mixture into 6  patties (1/4 cup of mixture per patty).

  3. Heat oil in a large frying pan over medium heat. Fry patties for about 4 to 5 minutes on each side or until golden brown and cooked through.  To ensure chicken patty is fully cooked, you may place a lid on the frying pan, half way through the cooking. Serve with sauce and an extra sprinkling of cilantro.
