A nice and healthy way to start your day.
Preheat oven to 375 degrees. Grease 12 cup muffin tin. Combine currants, 1-1/2 cups boiling water, olive oil and vanilla; set aside.
In a large bowl, combine the flours, sugar, baking soda and rosemary. Make a well in center of dry ingredients and add the wet ingredients. Stir until just combined. Add carrots and stir just until blended. The mixture should be lumpy; do not overmix. Fill muffin cups 2/3 to 3/4 full. Bake for 25 minutes. Remove immediately from pan and let cool on rack. Makes 12 muffins.
