This Great Cake Contest entry was submitted by ibk8tdid from Indio, California: 2 Layer Snow Covered Mountain Cake with a Forest of Trees and 2 Snowboarders Ready to Shred
Bake 2 round cakes, any flavor i.e.: (1) 3x16 and (1)3x12. Cool and freeze. When ready to decorate, remove from freezer and stack with smaller cake at the back edge of the larger one. Cut a "slope" off of one side to create mountain. (Freezing is not necessary, but it makes cutting, and frosting much easier. It also makes the cake incredibly moist since it thaws after it is frosted)
Frost both levels with white icing, then pour excess frosting down the mountain slope and around the cake to make an avalanche. Sprinkle with powdered sugar and add shimmering glitter effect with Wilton Cake Sparkles.
Set pre-made royal icing pine trees around the mountain and add plastic snowboarders or skiers for a winter fun zone!
Trees are made with sugar cones stacked on top of each other. You can make several different size trees by using various numbers of cones. Color royal icing green (or a few shades of green) and starting at the bottom of the tree pipe on branches with a star tip. When the trees dry and harden, sprinkle with powdered sugar for snow. These trees can be made several days in advance."
