Spaghetti Carbonara
What's your Take?

The smell of cooking bacon is usually enough to heighten kids' curiosity about carbonara. The recipe for this Italian treat is sure to please even the pickiest eaters.

What you'll need

  • 1 lb. bacon
  • 1/2 cup chopped onion
  • 1 lb. spaghetti
  • 2 eggs, lightly beaten
  • 1/2 cup grated Parmesan or Romano cheese
  • Salt and pepper
  • 2 tbsp. heavy cream

How to make it

  1. While heating a pot of water for pasta, cut bacon into 1/2-inch pieces and saute in a large skillet until crisp. Drain it on paper towels and reserve three teaspoons of fat from the pan. Add the onion to the pan and saute until it is softened. Set aside.

  2. Cook the pasta, drain it, and return it to the pot over very low heat. Immediately toss in the reserved bacon fat and bacon, beaten eggs, onion, cheese, salt, pepper, and cream. Make sure all the ingredients are well blended and heated through before serving. Makes 4 to 6 servings.
