Stoplight Slaw

Red, yellow, and green bell peppers pop with a sweetness and crunch that kids adore, and give this side dish its oh-so-appropriate name.

What you'll need

  • 8 ounces coleslaw mix (about 4 cups)
  • 2 cups red, yellow, and green bell pepper strips
  • 1/4 cup chopped green onion
  • 1/4 teaspoon salt
  • 1/2 cup poppy seed salad dressing

How to make it

  1. Combine the coleslaw mix, bell peppers, green onion, and salt in a large bowl. Toss the slaw with the poppy seed dressing, then cover and refrigerate for up to 2 days. Serves 6.
