What you'll need

  • 2 medium green bell peppers, cut in half, seeds removed
  • 1 package Cajun flavored rice
  • 1 jar of your favorite spaghetti sauce
  • 1 jar sliced mushrooms
  • 1 lb. ground beef
  • 1 package shredded cheese

How to make it

  1. Preheat oven to 350 degrees. In a large skillet, brown ground beef. Drain and rinse excess fat. Prepare Cajun flavored rice according to package directions. Add rice, spaghetti sauce and mushrooms to ground beef.

  2. Simmer ground beef mixture on low heat for 5 minutes. Arrange green peppers along the bottom of a greased casserole dish. Spoon ground beef mixture in and around green peppers. Cover and bake 20 minutes.

  3. Remove from oven. Top with shredded cheese. Return to oven uncovered just long enough to melt the cheese, about 5 minutes.
