Sun-Dried Tomato Veggie Wrap

Now that the weather is warmer, I start craving lighter food. For example a wrap! I love wraps because they are so easy to put together if you keep your pantry and fridge stacked with a few goodies to make them. I recommend having cream cheese, hummus or any other type of spreadable dip always accesible, as this is a very important part of a wrap! Also, some keep greens, beans and veggies handy. If you love sun-dried tomatoes like me, keep them stocked ...  they last a long time!

Make these wraps for lunch or even for a light dinner. If serving them to kids, go light on the sun-dried tomatoes, but I guarrantee they will still love them!

What you'll need

  • 4 big round tortillas
  • 4 tablespoons of whipped cream cheese
  • 4 cups of baby spinach
  • 2 medium avocados
  • 1 yellow or orange bell pepper thinly diced
  • 1 cup of sun-dried tomatoes in oil
  • salt and pepper to taste

How to make it

  1. Spread about 1 tablespoon of cream cheese (use more if you like!) on 1 tortilla, make sure to spread it to the borders to help "glue" it together at the end. 

  2. Cut avocado in slices and place 5 or more slices in a row towards the bottom half of the tortilla. 

  3. Add 1 cup of spinach on top and to the sides of the avocado. Add about 1/4 of the sun-dried tomatoes on top and about 1/4 of the diced bell peppers on top as well.

  4. Wrap the tortilla starting at the bottom covering the fillings completely and continue rolling. When it's all rolled fold the edges inwards a little, cut in half and serve!

    Repeat steps for all the tortillas.
