Tuna and Corkscrew Pasta Salad

A delicious cold salad that's great for lunch.

What you'll need

  • 8 oz. corkscrews or other medium-sized pasta
  • One 6-1/8 oz. can solid white tuna in water
  • 1 zucchini, diced
  • 1 green bell pepper, seeded and diced
  • 1 tomato, peeled, seeded and chopped
  • 3 scallions, sliced
  • 1/4 cup drained capers
  • 2 tbsp. olive oil
  • 2 tbsp. lemon juice
  • 1 tsp. minced basil
  • 2 tsp. minced parsley
  • Pepper

How to make it

  1. Cook pasta in boiling salted water. Drain and chill. Drain the tuna and combine with pasta, zucchini, bell pepper, tomato, scallions and capers. In a second bowl, mix the olive oil, lemon juice, basil, parsley and pepper to taste. Toss together lightly. Makes 6 servings.
