Tuna and Corkscrew Pasta Salad
A delicious cold salad that's great for lunch.
What you'll need
- 8 oz. corkscrews or other medium-sized pasta
- One 6-1/8 oz. can solid white tuna in water
- 1 zucchini, diced
- 1 green bell pepper, seeded and diced
- 1 tomato, peeled, seeded and chopped
- 3 scallions, sliced
- 1/4 cup drained capers
- 2 tbsp. olive oil
- 2 tbsp. lemon juice
- 1 tsp. minced basil
- 2 tsp. minced parsley
How to make it
Cook pasta in boiling salted water. Drain and chill. Drain the tuna and combine with pasta, zucchini, bell pepper, tomato, scallions and capers. In a second bowl, mix the olive oil, lemon juice, basil, parsley and pepper to taste. Toss together lightly. Makes 6 servings.
