This Great Cake Contest entry was submitted by stretch458 from Upland, California: A chocolate cake "rock" for the mermaid to sit on surrounded by chocolate seashells and candy coated chocolate rocks, on top of a jello ocean.
Preheat oven to 325. Butter a 2 1/2 quart oven proof glass bowl and coat with cocoa powder. Set aside. In bowl sift together first six ingredients. Add remaining ingredients and mix until just combined. Bake for one hour. Half way through, turn the cake and reduce temp to 300. Cake will be done when toothpick inserted in the center comes out clean. Let cool for 10 minutes in bowl then transfer to a wire rack to cool completely.
For the frosting: Combine eggs and sugar in a double boiler and stir constantly until mixture is warm to the touch. Transfer mixture to mixer and beat on high until it forms stiff peaks. Add butter, beat until smooth
Make jello, according to directions, pour in glass bowl, when it is half way set, put in gummi fish. Make a cake plate out of cardboard to place over your "ocean". Place cake on cake plate and frost cake, cover entire frosted cake with raw sugar to look like sand, place mermaid on top and decorate with chocolate sea shells and candy rocks"
