Preheat the oven to 375 degrees.
In a medium-sized bowl, sift flour with the baking powder and salt, and set aside.
In a large bowl, cream butter, sugar and vanilla. Add eggs, and slowly mix in dry ingredients until blended. Add red food coloring to the dough.
Cut the cookies out with a round cookie cutter and then cut each one in half. Place a few of the very small chocolate chips on each slice for the seeds.
Bake for 8 or 9 minutes, and after cooling, roll the round edge in an icing of powdered sugar and water with green food coloring. This makes each one look like a slice of watermelon.
