Watermelon Cookies

From the kitchen of Pam Wells, Baskerville, Virginia

What you'll need

  • 3 3/4 cups sifted flour
  • 1 1/2 tsp. baking powder
  • 1 tsp. salt
  • 1 cup butter or margarine
  • 1 1/2 cups sugar
  • 2 tsp. vanilla
  • 2 eggs
  • Red food coloring
  • 1 pkg. chocolate chips
  • Powdered sugar
  • 1 cup water
  • Green food coloring

How to make it

  1. Preheat the oven to 375 degrees.

  2. In a medium-sized bowl, sift flour with the baking powder and salt, and set aside.

  3. In a large bowl, cream butter, sugar and vanilla. Add eggs, and slowly mix in dry ingredients until blended. Add red food coloring to the dough.

  4. Cut the cookies out with a round cookie cutter and then cut each one in half. Place a few of the very small chocolate chips on each slice for the seeds.

  5. Bake for 8 or 9 minutes, and after cooling, roll the round edge in an icing of powdered sugar and water with green food coloring. This makes each one look like a slice of watermelon.
