What you'll need

  • 3 cups shredded lettuce
  • 1 green pepper, sliced
  • 1 tomato, sliced
  • 1/4 cup chickpeas
  • 1 1/2 ounces deli-style turkey breast, julienne-sliced
  • 1 ounce low-fat cheese, julienne-sliced or shredded
  • 2/3 teaspoon olive oil
  • Vinegar to taste

How to make it

  1. Combine first four ingredients.

  2. Top with turkey and cheese.

  3. Toss with oil and vinegar.
