Spa Chicken Salad

This light and refreshing chicken salad is a perfect lunch on a hot summer day! Healthy grapes, apples, and alomonds give a nice bright kick to traditional chicken salad and will leave your tastebuds dancing.

What you'll need

  • 2 cups rotisserie chicken, shredded
  • 1 cup red seedless grapes, halved
  • 1 cup green apple, cubed
  • 1/3 cup slivered almonds
  • 1/2 cup reduced fat mayonnaise
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon fresh lemon juice
  • salt and pepper to taste

serves 6

How to make it

  1. Place all ingredients in a large bowl and stir until everything is combined. Taste and add salt and pepper if needed.

  2. Serve 1/2 cup of chicken salad alone or on bread or a croissant as a sandwich.
